Geoff Jansz visited Debbie, Danielle, Jack and Jamie. He offered to cook them a meal, but they told him the fridge was bare! However, Geoff managed to find one potato and some eggs and whipped up a Spanish omelette. He served the omelette with a special sauce made from ingredients he found in the kitchen.
Spanish omelette is basically a thick potato omelette, which can be eaten hot or cold. It is known in Spain as tortilla de patatas. This recipe serves 4.
4 potatoes, peeled and thinly sliced
6 eggs, beaten
1 Spanish onion, chopped
1 green capsicum, chopped
olive oil
salt
Fry the sliced potatoes in the olive oil until soft, taking care not to let them burn. Add the onion and capsicum and continue frying until the vegetables are soft. Drain off the excess oil.Beat the eggs in a bowl and add seasoning, to taste. Add the potato mixture.Heat a little oil in the frying pan. Pour the potato and egg mixture into the pan, and cook until the omelette has set (Tip: shake the pan occasionally so the omelette does not stick to the bottom).Place a large plate over the frying pan and quickly flip the omelette over. Slide the omelette back into the pan and continue cooking until it has set through. Remove from pan and serve with Geoff's special sauce.
2-3 tablespoons mayonnaise
1 tablespoon tomato sauce
1 teaspoon dried parsley
1 teaspoon powdered cinnamon
Mix ingredients together and serve with the Spanish omelette.
