Potato Salad & non-alcoholic Bloody Mary

Potato Salad

After exercising or doing some gardening you’ll probably find that you’ve worked up quite an appetite! Geoff Jansz suggests recharging your batteries with a healthy, tangy potato salad. While that’s cooking, replace fluids lost during exercise by sipping a Virgin Mary (a non-alcoholic Bloody Mary).

Desirée Potatoes

Potato Salad

Ingredients

  • 1kg waxy potatoes (eg Kipfler or Desirée)
  • 4 gherkins, finely diced
  • 2 pickled onions, finely diced
  • 1 apple, finely diced
  • 1/2 cup walnuts
  • 2 teaspoons seeded mustard
  • 50ml light mayonnaise
  • 50ml light sour cream
  • chives and parsley, chopped
  • salt and pepper, to taste

Method

1. Scrub the potatoes and boil until tender with the skin on. (Tip: The potatoes are perfectly cooked when they just fall off the fork with their own weight.)
2. While the potatoes are cooking, place all the other ingredients into a bowl and mix until well combined.
3. Dice the potatoes while still hot. Stir the dressing through, being careful not to break up the potatoes.
4. Serve with tinned salmon, salad and sliced tomatoes
5. Serves 6

Virgin Mary

  • tomato juice
  • Worstershire sauce
  • a few drops Tabasco sauce
  • lemon juice
  • black pepper
  • celery, for stirring

Place all the ingredients into a glass, then stir with the celery. Sip as you’re preparing the potato salad!
