Use Geoff's quick and easy recipe to make up a batch of that marshmallow and chocolate-filled favourite, Rocky Road.
Ingredients
500g quality milk chocolate
200g-300g Turkish Delight, roughly chopped
200g quality marshmallows, cut into halves
1/2 cup pistachio kernels, chopped
Method
1. Break the chocolate into pieces, then place them in a glass bowl and melt in a microwave oven for 40 seconds on High (900-1000W). Stir the chocolate, and if it has not completely melted, microwave for another 20 seconds. If you don’t have a microwave oven, put the bowl containing the chocolate pieces over a saucepan of very gently simmering water, until the chocolate melts completely.
2. Combine all the remaining ingredients in another large bowl, then pour in the melted chocolate and mix thoroughly.
3. Pour the mixture into a slice tin lined with either baking paper or greaseproof paper, and press it down gently.
4. Refrigerate until it has set completely, then cut the Rocky Road into serving squares.
