Warm rocky road banana split

Preparation time: 15 minutes  Cooking time: 5 minutes  Makes: 4

•  4 large bananas

•  1/2 cup (25g) mini marshmallows

•  1/3 cup (60g) choc bits

•  1/4 cup (40g) roasted unsalted peanuts, roughly chopped

•  2 tablespoons toasted shredded coconut

•  vanilla ice-cream, to serve

 

1. Preheat a barbecue to medium heat while you prepare the four parcels.

2. Lay out four double thickness squares of foil. Cut the bananas in half lengthways, place onto the foil. Fill with marshmallows, choc bits and peanuts, and sprinkle with toasted coconut. Fold the foil to enclose.

3. Cook the parcels on the barbecue for 5 minutes, until warmed through and the marshmallows and chocolate have softened. Open up the foil, and top with a scoop of ice-cream.

note: the best thing about camping at home is proximity to the freezer for ice-cream! You can cook these in the coals if you have an open fire – just make sure it isn’t too hot, or the bananas may burn.
