Green Mango Salad

1 small green mango, peeled, flesh cut into matchsticks
2 tablespoons shallots, sliced finely
1 tablespoon fresh coriander leaves
1 tablespoon fresh mint leaves, chopped
2 tablespoons chopped roasted peanuts
2 teaspoons dried garlic flakes, deep-fried in oil

Dressing

2-3 fresh small green chillies, finely chopped
pinch salt
1 teaspoon grated palm sugar
1 tablespoon fish sauce
1 tablespoon lime juice

1. First make the dressing by combing all the ingredients in a bowl.
2. To assemble the salad, combine the mango, shallots, coriander, mint and peanuts in a bowl. Add the dressing, toss to combine, then sprinkle with the garlic flakes, and serve.
