Serves: 4-6
1/2 cup (110g) caster sugar
1/2 cup (125mL) water
1/2 vanilla pod, split
1kg watermelon, chilled
1 egg white
sea salt flakes (we used pink salt)
2/3 cup (160mL) lime juice
1/2 cup (125mL) tequila
1. Combine the sugar and water in a small saucepan. Stir over low heat until the sugar has dissolved, then add the vanilla pod and bring to the boil. Cook without stirring for 3 minutes. Set aside to cool, then remove the vanilla pod, rinse and dry for another use. Chill the syrup.
2. Cut all the skin from the watermelon, and cut the flesh into chunks. Puree in a blender or food processor, then strain through a sieve, pressing with the back of a spoon to extract the juice.
3. To prepare the glasses, lightly whisk the egg white in a wide bowl, and sprinkle the salt onto a saucer. Dip the rim of each glass into the whipped egg white, then the salt. Leave for a few minutes, to fully set.
4. Combine the watermelon juice, syrup, lime juice and tequila in a jug. Pour into the glasses carefully, and serve.
