Ham and fig salad

Prep time: 15 minutes 
Serves 4

• 2 bunches rocket
• 4 large fresh figs
• 125g round brie
• 2 tablespoons extra-virgin olive oil
• 1 tablespoon white wine vinegar
• 1 teaspoon wholegrain mustard
• 1/2 teaspoon honey
• 400g sliced leg ham off the bone
• crusty bread, to serve

1. Wash and dry the rocket leaves. Discard the thicker parts of the stems, and roughly tear the leaves. 
Cut the figs into quarters lengthways, and cut the brie into thin wedges.
2. Put the olive oil, vinegar, mustard and honey in a small, screwtop jar. Seal tightly and shake to combine. Season with salt and pepper to taste.
3. Arrange the rocket leaves, plus sliced figs, brie and ham onto serving plates. Drizzle with the dressing, and serve with some crusty bread.
