Peter Valder has always been fond of poached egg on rice. It may sound like a bizarre combination but Peter says it is an easy and delicious light meal for breakfast or at any time of the day.
Ingredients
egg
bacon
rice, freshly cooked
chives, chopped
salt and pepper, to taste
Method
1. Fry the bacon.
2. Poach the egg in boiling salted water, or use an egg poacher. (Note: do not overcook, the yolk should be runny.)
3. Pile the cooked rice in the centre of a serving plate and sprinkle with the chives.
4. Serve the poached egg on top of the rice, with the bacon on the side.
