One Pot Spiced Rice and Lamb
This Middle Eastern, one-pot dish is quick, inexpensive and delicious.
Ingredients:
1 large red capsicum, finely chopped
1 large onion, finely chopped
2 cloves of garlic, finely chopped
2 tablespoons of olive oil
500g lamb mince
2 tablespoons of pine nuts
300g Basmati rice
1/2 cup of raisins
1 tablespoon of cinnamon
1 tablespoon of paprika powder
1 teaspoon of white pepper
Pinch of salt
1 litre of chicken stock
1 cup of coriander leaves, chopped
1/2 a lemon
Method:
1. Seed and remove the ribs of the capsicum. Chop finely, along with the onion and garlic.
2. Add two tablespoons of olive oil to a large, heated cooking pot. Brown the lamb mince, then stir through the capsicum, onion and garlic.
3. Stir in the pine nuts and rice.
4. Add the raisins, cinnamon powder, paprika powder, white pepper and generous pinch of salt. Stir thoroughly.
5. Pour in enough chicken stock to barely come to the surface of the mix.
6. Put the lid on, turn the heat down low and cook for about 15 minutes.
7. When the lamb and rice are cooked, add the coriander leaves and lemon juice.
8. Stir through and serve.
