Kiwi Gold Terrine

Geoff Jansz demonstrated how to make a fabulous dessert using the new Kiwi Gold kiwi fruit.

Ingredients

  • 750ml apple juice
  • 6 Kiwi Gold kiwi fruit, peeled, roughly chopped
  • 6 green kiwi fruit, peeled, roughly chopped
  • 3 tablespoon gelatine
  • 1/2 cup cold water
  • 1 cup caster sugar

Method

  1. Put the apple juice and caster sugar into a saucepan and bring to the boil.
  2. Put the gelatine into a small microwave-proof bowl, add the cold water and stir to dissolve. Let sit for couple of minutes until gelatine has become firm. Microwave for 30-60 seconds (depending on the power of your microwave) until gelatine is hot and liquid. Do not boil.
  3. When the apple juice/sugar mixture comes to the boil, pour in the gelatine, stir, and remove from heat.
  4. Prepare the green kiwi fruit, and place in bottom of a terrine dish. Pour over enough apple liquid to just cover the fruit. Place the bowl into another large bowl full of ice, and leave until the gelatine is firm.
  5. Prepare the gold kiwi fruit, exactly as before, and gently place on top of the green layer, Add enough apple liquid to cover the fruit.
  6. Put the terrine dish in the fridge to set (it will take approximately 2-3 hours).
  7. To serve, warm a tea towel under hot running water. Wrap around the terrine dish to help loosen the dessert. Put a serving plate on top of the terrine dish and turn dessert onto plate.
  8. Serve immediately with ice cream or custard.

Kiwi Gold kiwi fruit is at the end of its growing season but major supermarkets Australia-wide have limited stock available.
