Geoff Jansz made a healthy frittata using eggs collected from his mate’s chook pen. (Note: check with your local council regarding regulations for keeping poultry.)
Ingredients
- olive oil
- 4-6 medium eggs, whites only
- 2 small red capsicum, sliced
- 1/2 Spanish onion, cut into wedges
- 2 medium zucchini, sliced
- 2 medium carrots, peeled and sliced
- 8 button mushrooms, sliced
- chopped parsley
- Greek oregano
- salt and pepper, to taste
Method
- Heat the olive oil in an ovenproof frying pan.
- Add the capsicum, onions, zucchini, carrots and mushrooms to the pan. Fry the vegetables until they brown slightly and the moisture evaporates. Add the oregano, parsley, salt and pepper, to taste.
- Whip the egg whites a little (but don’t aerate them too much). Add the beaten egg whites to the pan and fry the frittata until the bottom is crispy. (Tip: when using eggs from your own hens, be sure to wash them thoroughly and then wash your hands.)
- To finish cooking the frittata, place in an oven preheated to 200°C for 15-20 minutes.
