Geoff’s Brown Rice

Geoff Jansz walked the streets of Carlton in Melbourne, helping people with their culinary questions. He met Chris and Voula Paschalidis, who admitted to having a problem with brown rice. Geoff went to their place, solved their problem and cooked dinner at the same time.

Ingredients

Rice

1 cup brown rice

2 1/2 cups water salt oil

Dressing

1 carrot, chopped

1/2 red capsicum, chopped

1/2 green capsicum, chopped

1 celery stalk, chopped

1 spring onion, chopped

4 tablespoons olive oil

2 tablespoons red wine vinegar

salt and pepper

1 teaspoon garlic, crushed

1 tablespoon chilli sauce

2 tablespoon capers

Method

1. Put the water into a large saucepan and bring to the boil.
2. Stir in the rice, salt and a little oil. Bring back to the boil.
3. Place a tight-fitting lid on the pan, turn the heat right down and simmer for 45 minutes. (Note: do not lift the lid, or the steam that is cooking the rice will escape.)
4. Combine the dressing ingredients in a large bowl. Stir the cooked rice into the dressing and serve.
