Fake Feast

Geoff Jansz faked a gourmet meal for undert $3 per serve, using bought chicken, pumpkin and gravy. Preparation time was around 20 minutes

Ingredients

1/2 BBQ chicken 1 small tub roast pumpkin 1 small tub salad greens 1 small bunch fresh tarragon, chopped 1 1/2 cups gravy 1 tablespoon brown vinegar 1 tablespoon honey 1 sheet frozen puff pastry milk, to glaze 1 tablespoon butter, softened salt and pepper, to taste sesame seeds

Method

To make the sauce: tip the gravy, brown vinegar and honey into a small saucepan. Add the chicken skin and bones. Simmer for 10 minutes, remove the bones and skin then add the fresh tarragon. Defrost 1 sheet of puff pastry. Brush the pastry lightly with milk, cut into 9-12 squares then sprinkle with sesame seeds. Place the squares on baking paper in a baking tray, then bake at 200°C for 10-15 minutes, or until puffed and golden. When the pastry is cool, slice each square through the centre and separate the two halves. Puree the pumpkin with a little salt, pepper and butter.

To serve

Anchor one half of pastry to the centre of a serving plate with a dob of pumpkin puree. Top with more pumpkin puree, shredded chicken, sauce and a pastry lid. Arrange the salad attractively around the outside of the plate.
