Have you ever eaten witlof?  This is a truly magnificent plant that has a slightly bitter licorice-like flavor.

….well sort of.  Witlof is the result from growing chicory from seed in spring for about 16 weeks.  Then it’s cut back to just below ground level and the re-growth is kept totally in the shade for about 3 weeks when they are ready for harvest.

This blanched chicory re-growth is called witlof and it is nowhere near as bitter as ordinary chicory.

Witlof is excellent with chicken or fish in sauces or it can be added to salads.  If you are entertaining this will really impress your guests.

To repeat, witlof is a whitish lettuce-like re-growth from chicory plants.  It has a wonderful subtle flavor and it is a very healthy food.
