Sweet Truffles

Recipes for chocolate truffles are quite common, but most require liquor. My 
recipe doesn’t. There are many different types of truffle, ranging from apricot to almond to white chocolate. Simple chocolate truffles are still the most popular, though, and here’s my recipe for them.

Chocolate Truffles
• 110g dark chocolate
• 85g unsalted butter
• 1 tablespoon icing sugar
• 1 egg yolk
• 55g cocoa
1. In a small saucepan melt together the dark chocolate, butter and icing sugar, and stir well until the mixture is well-combined. Put it aside to cool.
2. When cooled, stir in an egg yolk very quickly (so it won’t cook). When the mixture has cooled entirely, roll them into small balls and coat them with the cocoa.
