Prawn Cocktail
Geoff Jansz demonstrated how to make prawn cocktails with a Thai twist! The best place to buy prawns is your local fish market, but don’t go for the biggest ones – Geoff says that little school prawns have the most flavour. The quantities given below will serve 4 people.
Ingredients
- 24 cooked prawns, peeled
- 1 crisp lettuce, such as Cos; alternatively, use 1 Chinese cabbage (save 16 of the best small leaves and finely shred the rest)
- 1 cup chopped herbs: coriander, mint, and Thai basil (or sweet basil, if you can’t find Thai)
Dressing
- 100ml whole egg mayonnaise
- 1 clove garlic, crushed
- 20ml fish sauce
- chopped fresh chilli, to taste
- 2 tablespoons lime juice
Method
1. Prepare the prawns.
2. Combine the dressing ingredients (mayonnaise, fish sauce, garlic, chilli and lime juice). Add the chopped herbs and stir them through the dressing.
3. Arrange lettuce leaves on serving plates, top with prawns, then drizzle the dressing over the prawns.
