Pasta of Love

Geoff Jansz demonstrated how to make a simple but full flavoured pasta dish, which balances the smoky characteristics of the fish with the light, creamy texture of pasta and vegetables. Geoff said this recipe is perfect for a romantic dinner, and is guaranteed to put some zing back into your relationship!

Ingredients

1/2 cup water
1 tablespoon butter
1 small onion, finely diced
100g dry pasta
1 tablespoon cream
1/2 cup carrot, julienned
1/2-1 cup peas
50g smoked salmon or whole smoked trout, flaked
pepper
2 tablespoons chives, finely diced
2 tablespoons fresh dill, chopped
1 tomato, finely diced

Method

Add the water, then the butter to a large pot. Fry the onions until they have softened, but not browned.Cook the pasta in boiling, salted water.Stir the cream into the onion and butter mixture.When the pasta is almost cooked, add the peas and carrots and cook for a further minute.Add the trout pieces to the sauce, along with a sprinkle of pepper. (Tip: Fold the fish through gently, being careful not to break the flakes.)Strain the cooked pasta, peas and carrots into a colander.Add the pasta, peas and carrots to the sauce.Sprinkle in the chives and dill, then serve with a topping of diced tomatoes.
