When you cut an onion the juice evaporates, gets into your eyes and makes them water. As with all liquids, the hotter the onion juice is the more it evaporates. An easy way to stop onion juice from evaporating is to put the onion in the freezer about 15 minutes before chopping. When you chop a cold onion more of the onion juice will be in a liquid, rather than a gaseous form, so no more tears!
