Chocolate Rice Tart
- 100g arborio rice
- 500ml milk
- 150g dark chocolate (Belgian quality if possible)
- 125g caster sugar
- 50g unsalted butter softened
- 2 eggs
- 25g walnuts
- 25g pine kernels
- 30g sultanas
- 30g candied orange (optional)
- 4ml Vecchia Romagna (or good quality brandy)
- grated rind of 1 lemon
- 400g short crust pastry (home made preferable)
Method:
1. Boil milk with rice and sugar, until rice is cooked and the milk radically reduced. Turn heat off, add the chocolate. Set aside to cook.
2. Add all the rest of the ingredients and mix well.
3. Preheat oven to 180
