Geoff Jansz whipped up some flavoured butter for grilled breads, and also showed us how to turn one loaf of bread into four!
Ingredients
500g butter, softened
1 large, unsliced loaf fresh bread
Topping
Chilli
red chilli, finely diced (to taste)
2 tablespoons sugar
juice of 1 lemon
Italiano
3 anchovies
1/2 cup parmesan cheese, grated
1/2 red onion, finely diced
Garlic
6 cloves garlic, mashed
Herb
1/4 cup mixed herbs, freshly chopped (Geoff used tarragon, parsley and chives)
Method
Beat the butter vigorously until light, fluffy and aerated. Flavour the butter with any of the four toppings listed (see left). Note: leftover flavoured butter can be stored in the fridge or freezer until needed.Either trim the crusts from the loaf of bread, or if you like extra crunch, leave the crust on the top and bottom of the loaf.Cut the loaf in half lengthways, then cut each of the two segments in half lengthways again. You will now have four equal segments of bread.Spread the bread with flavoured butter, and cook in an oven at 180
