Strawberries

Geoff Jansz has two simple ideas to help you make the most of the strawberry season. The dip takes seconds to prepare and is great as an outdoor dessert, and the couli can be served with ice-cream or your favourite cake, or used to make strawberry milkshakes!

Strawberry Dip

1 punnet strawberries
200g light sour cream
1/2 cup brown sugar

1. Wash the strawberries well. (Tip: don’t remove the hulls, or water will enter the strawberries and they will go soggy.)
2. Serve on a platter with a bowl of light sour cream and a bowl of brown sugar.
3. Dip each fresh strawberry into the light sour cream followed by the brown sugar.
4. Enjoy!

Strawberry Coulis

2 punnets strawberries
2 dessertspoons icing sugar
juice of half a lemon

1. Wash and drain the strawberries, then cut the hulls off with a sharp knife.
2. Place strawberries in a blender, along with the icing sugar and lemon juice.
3. Blend until you have a smooth sauce, then serve.
