Soup Booster
Some people like spicy soups, but others, especially children, often prefer them bland. Rather than trying to cater for all tastes, Geoff Jansz uses a booster for those who like soup with a bit of a kick. Geoff’s soup booster also adds life to canned soups.
Ingredients
1/2 cinnamon stick
2 bay leaves
12 whole cardamom pods
12 cloves
1 tsp whole black peppercorns
lemon peel slivers
ginger, sliced
1 1/2 cups dry sherry
Method
Place all ingredients into a clean, sterilised jar. Put the lid on the jar and leave at room temperature for 1-2 weeks to allow the flavours to infuse. Add to your favourite soups to taste.
