Rosemary and other great culinary herbs

As a bonus for Don’s radio listeners, we have a recipe for one of the best of the traditional, classically simple pizzas – potato and rosemary pizza. It’s a great idea for entertaining served as an entrée.

Potato and rosemary pizza

1 x ready-made 30cm plain pizza base
1/2 cup finely grated parmesan cheese
2 large potatoes, peeled, sliced very thinly
olive oil spray
1 level tablespoon finely chopped fresh rosemary

1. Pre-heat oven fully to 220ºC.
2. Sprinkle the pizza base with cheese.
3. Arrange potato slices so they slightly overlap, to cover the top of the pizza completely. Spray with olive oil, sprinkle with salt and pepper and scatter the rosemary over evenly (don’t add too much rosemary – it has a strong flavour).
4. Bake pizza for 10-15 minutes, until nicely coloured, let it cool a minute or so, then cut into slices and serve as an entrée or light snack.
Note: you can add a crushed clove of garlic to the pizza topping (sprinkled under the potatoes) if you like.
