Hi mosqito. Cook up the mushies in plenty of butter then freeze the lot in one lump. You can just cut off what you need and re-heat.I don't know if it works with, say, olive oil,but worth a go if you are anti-butter.

I freeze my mushy soup with no problems.
There might be some other ways to cook them too, so you don't get sick of the same way.
They can also be pickled, but Im not sure how its done.

Have you considered drying them? I have a fridge that tends to dry things out - I leave the mushrooms in a paper bag in our fridge and if they haven't been used beforehand they tend to dry out. These dry mushrooms are still ok to use in cooking. They keep for ages that way.

Hi mosquito. If I could just pass on a quiet word of warning re old [dry] mushrooms.Unlikely, but possible, toxicity. Results can be extremely serious. Not worth the risk.

The dried mushrooms I've made haven't harmed me any, and they've cooked up fine. Maybe look up some hints for drying mushrooms on the net or in the library. Not all fridges will do what mine does - it'll dry fresh foods out (I have to make sure I wrap everything in plastic if I want it to stay fresh and crisp), it's part of a frost free fridge/freezer.

Hi thank you for your comments. At the moment we are eating them pretty much straight away. I dont eat them if they have dried up to much anyway.
