Excess Tomatoes - Freezing?

I've got a huge crop of tomatoes coming in, and far more than I anticipated. Can they be frozen? I read somewhere that you can freeze them without peeling or blanching. Any other suggerstions?

You can certainly freeze tomatoes but they will only be able to be used in soups, stews and sauces. They will no longer be firm fresh fruit.

You could make your own tomato sauces for pasta, tomato jam or tomato chutney and relish from your fresh toms. If you have any left after all that then freeze for soups and stews.

The tiny tomatoes are nice when they are slightly frozen. Our fridge gets quite cold at the back of it and part of our tiny tomatoes placed in the fridge became frozen. They weren't left in long enough to become mushy - it was quite an unexpected treat.

Do you have to prepare the tomatoes in anyway before you freeze them?

Have you thought about sun drying or oven drying your tomatoes? All info avail on the net and apparently cherry tomatoes are the tastiest type to sun dry.

Drying the tomatoes will give the best result as far as flavour is concerned. Tomato paste or sauce etc. is good, but freezing fresh tomatoes is a waste, they have no flavour after defrosting.

Ripe tomatoes freeze well without preparation in my experience. Thawed, they are mushy but useful, flavoursome and versatile if cooked down carefully with the usual additives: onion, garlic, zucchini (also freezable without preparation) aubergine etc and herbs. Yum!
