Apple tree compatibility

Hi all,
I move into my new house in a week's time and one of the first things I want to do is put in a few fruit trees while it's still winter, but I'm having trouble planning which apple trees to get. I'd like one eating tree (for general eating) and one cooking tree (for cider and wine making), but they need to be compatible with each other.
My wife would like a fuji tree, so the mission is to find a cooking apple variety that is compatible with fuji. I asked at a nursery today but it stumped them. They suggested perhaps a granny smith but their records said fuji and granny smith aren't compatible with each other. As a pom the obvious one that springs to mind is a bramley, but I can't find any info on which species bramleys are compatible with and I suspect it might be hard getting my hands on one in Australia.
As a side note, pear or quince trees aren't compatible with apple trees are they? I'd like a quince tree but don't really have enough space for 2.
I'm in Melbourne.

Try here for information on Apple tree pollinators. They also have a forum where you can get fruit tree problems answered.
