Watermelon Sorbet

Geoff Jansz went to Sydney’s famous Bondi Beach searching for recipe ideas for a whole watermelon. Lots of people suggested filling the melon with vodka! However, Geoff decided to make a delicious watermelon sorbet, which can be served as a refreshing treat or dessert.

Ingredients

  • (makes 10-12 cups)
  • 2 cups white sugar
  • 2 cups water
  • juice of 1/2 a lemon
  • 1 medium-sized watermelon, diced (Geoff used a seedless watermelon)

Method

  1. Put the sugar and water into a saucepan and boil for 5 minutes. Let the mixture cool to room temperature, place in a bowl, cover and then chill in the fridge overnight.
  2. Dice the watermelon into approximately 2.5 cm or 1″ cubes. Place the cubes in a tray and freeze overnight. (Tip: to split the watermelon, place the edge of the blade against the skin and with the flat of your hand firmly tap the back of the knife. Always remember to cut away from your hand when dicing watermelon.)
  3. Before serving, add the lemon juice to the sugar syrup and combine well.
  4. In a blender or food processor, blend the watermelon and half the sugar syrup, adding more sugar syrup until the consistency is thick like a gelato.
  5. Serve in chilled glasses, or store in the freezer until ready to serve.
