If, like Jackie French, you have fairies at the bottom of your garden, you might be worried that they’ll turn the milk sour, pour water into your gumboots and stop the bread from rising! Jackie manages to keep her fairies happy with milky treats like custard or better still, an old fashioned syllabub. The problem of unfriendly fairies might not concern you, but syllabub is still worth making because it’s light, delicious and only takes about thirty seconds to prepare!
Ingredients
- 500-600mls cream
- juice of 3 lemons
- zest of 1 lemon
- 3 tablespoons castor sugar
- nutmeg, grated
- 5 tablespoons extremely good sherry (optional for adult fairies only)
Method
Beat all ingredients together, then pour into small glasses and top with grated nutmeg.
(Tip: You only need small glasses because syllabub is very rich.)
