Gingered Oranges

This spicy dessert is perfect served with Asian dishes such as Singapore Noodles.



Ingredients

1/2 cup water
1 cup caster sugar
2-3 tablespoons ginger, thinly sliced
1 navel orange per person, pith removed and thinly sliced
cream or ice-cream, with mint leaves to accompany

Method

1. Combine the water, caster sugar and ginger in a saucepan, bring to a simmer and let simmer for 5 minutes. Remove from heat, let it return to room temperature then pour into a bowl.
2. While the syrup is cooling, slice the skin and pith from the oranges then slice into segments, either circular or thin wedges – it’s your choice. Add them to the cooled syrup and let the flavours infuse, either at room temperature for 30 minutes, or in the fridge for at least 2 hours.
3. To serve, remove the orange pieces from the syrup, arrange on a plate and serve with a dollop of cream or ice-cream. Garnish with fresh mint leaves.
