Flat Bread – The French Alternative
In olden days people were too busy fighting dragons to wait for bread to rise! There was also a severe shortage of ovens, although they did have hearthstones or frying pans. Jackie French demonstrated how to make bread the old fashioned way. Flat bread is delicious, and great for soaking up juices if you’re having a curry or stew. Best of all, it only takes about ten minutes to make.
Ingredients
- 4 cups bread flour
- 1 cup warm water
- 1 sachet dry yeast
- oil
Method
Put all the ingredients into a bowl. Knead until it almost looks transparent. (Note: add more water if necessary.)
Roll the mixture into small balls, flatten them, and leave for 5-10 minutes to rise.
Heat a little oil in a frying pan and fry on both sides until brown.
Serve hot with butter and jam, or as an accompaniment to soup, stew or a curry.
Further information
Bread flour is sold in most supermarkets. Plain flour can be substituted but for light, puffy flat bread, it’s best to use bread flour.
