Don’s Leftover Lamb Curry
Don made a rare appearance in the kitchen to pass on his own family recipe for lamb curry. You won’t find this one in a recipe book! It’s made from leftovers – basically just use whatever is lying about in the cupboards or in the fridge. There are no quantities given because the ingredients vary so much, but during cooking it is important to occasionally taste the curry to see if you need to make any adjustments.
Suggested Ingredients
2 onions, choppedleftover leg of lamb, cut off the bonefruit, equal to the quantity of lamb. Don combines fresh fruits such as bananas, apples and paw paw with dried fruits such as sultanas, figs and apricots. Any fresh or dried fruits can be included, even canned fruit.
