Chocolate and Hazelnut Muffins

Geoff showed how to bake tasty muffins using choc chips and nuts.

Ingredients

(Makes 15)

2 1/2 cups plain flour
1/2 cup skim milk powder
4 teaspoons baking powder
pinch salt
3/4 cup brown sugar
1/2 cup good quality cocoa powder
1/2 cup chopped hazelnuts
1/2 cup chopped chocolate
500 ml buttermilk
1 whole egg
3/4 cup vegetable oil

Method

1. Grease one 12-muffin and one 6-muffin pan. (Tip: Geoff used oil spray, as it coats the tins thoroughly.)

2. Preheat oven to 180°C (360°F). Place shelf in centre of oven.

3. Sift together the flour, skim milk powder, baking powder, salt, brown sugar and cocoa powder.

4. Add chocolate and hazelnuts. Mix thoroughly with a spoon.

5. Whisk together the egg, buttermilk and oil, and then fold through the dry ingredients.

6. Divide mixture between muffin pan cups, filling each 2/3 full.

7. Bake on centre shelf of oven for 18-20 minutes.

8. Turn muffins out onto a wire rack. Serve warm.
