Geoff Jansz travelled to Richmond, Melbourne, where he met Geoff Lindsay, chef and owner of the award-winning Pearl Restaurant and Bar. They prepared a meal for two people in 2 minutes for under $5, showing that fast, cheap food doesn’t have to be junk food!
2 minute noodles with a spicy Thai broth
Ingredients
- 2 packets 2 minute noodles
Broth
- 1 tomato, diced
- pinch of palm sugar
- 1 knob raw ginger, sliced
- 2 Kaffir lime leaves, bruised (or use lemon or lime zest)
- 1 small chilli, halved lengthways
- small bunch basil leaves, torn
- 2 leaves Vietnamese mint
- 1 tablespoon fish sauce
- boiling water
- Garnish
- small handful of bean sprouts
- basil and mint leaves
Method
- Cook the noodles as per the directions on the packet (leave the flavour sachets out).
- While the noodles are cooking, put the kettle on, prepare the broth ingredients and drop them into a coffee plunger. (Tip: if you are preparing this meal for more than two, don’t increase the chilli proportionally, one chilli will usually suffice.)
- Pour boiling water into the coffee plunger and allow the flavours to infuse.
- Drain the noodles. Place them into serving bowls and garnish with bean sprouts and fresh herbs.
- Depress the plunger on the coffeepot, pour the hot broth over the noodles and serve.
