Sago Plum Pudding

Sago Plum Pudding

This old-fashioned dessert is made from simple ingredients, but it has a unique flavour.

Ingredients
4 tablespoons sago or seed tapioca
1 1/4 cups milk
1 1/2 tsp butter, softened
1/2 cup sugar
1 cup raisins
1 cup soft, white, breadcrumbs
1/2 teaspoon baking soda
1 teaspoon lemon essence
pinch salt (optional)

Method

1. Place sago or seed tapioca in a bowl. Pour the milk over and leave overnight or for at least 8 hours, preferably in the refrigerator.
2. Combine the butter and sugar. Add the dry ingredients and stir thoroughly.
3. Stir the lemon essence and the baking soda into the milk-sago mixture. Add the milk-sago mixture to the other ingredients and mix thoroughly.
4. Place the mixture into a greased pudding basin. Pat down neatly and cover with the lid if the basin has one, otherwise cover tightly with foil.
5. Place in a large saucepan of boiling water and steam for 2 1/2 hours.
6. Turn the pudding out and serve with cream, ice cream or custard.

Note: The original recipe using real sago recommends only 1 cup of milk. Since it is difficult to obtain real sago these days and seed tapioca absorbs more moisture, Peter recommends that if you use seed tapioca, increase the milk to 1 1/4 or even 1 1/2 cups for a better result.
