Flaming Figs

This grilled fig dessert from Geoff Jansz is delicious, easy to make and it will really blow your friends away!

Ingredients

figs – you can use any fruit that you like, except perhaps berries which are too small butter icing sugar Marsala walnuts ice-cream.

Method

1. Split the fruit in half, and in the case of stone fruit, remove the seeds.
2. Dip the cut surface of the fruit with melted butter and sprinkle heavily with icing sugar. Place the fruit on a tray.
3. Use a blow torch (or place under the grill) to caramelise the icing sugar. As the fruit is grilling, keep dusting with icing sugar.
4. Splash with Marsala and serve with a few scoops of ice-cream and a sprinkle of walnuts.

Blow torches can be purchased from specialty kitchen shops or most hardware stores.
Geoff used a Primus torch burner (BJ 2145) with cylinder, priced at $75. The cylinder alone (BJ 2145a) costs $37.50.
